Bring Your Own Hardtack, I'm guessing?
The Civil War game sounds interesting, in theory. The only problem being it throws all of the tactics and things we know about warfare out the window (then again, that may not necessarily be a problem). I'm assuming reloading would consist of pulling a single round out of your bag, putting it into your magazine, putting your mag back in, and firing (or something like that).
A few objective ideas:
Capture/ Destroy the Cannons: Get some cannon props, and one side must—yep—destroy or capture the cannons. To make things interesting, these cannons could give the defenders an advantage, and if some people volunteered as "horses," could maybe move the cannons.
Attack/Defend: Generic stuff, with a Civil War twist.
Siege: Like Defend, but could involve the use of cannons, if they happen to have some bonus associated with them. Could also be considerably long.
...And i'm out of ideas for now. Would love to see this happen. And before Dave says it, we know,"Just help me get it together, and it'll happen."
