Is the concrete for a foundation or something else?
If it's not for a foundation, don't read any further, as this is not relevant:
You cannot pour a foundation of any reasonable size (bigger than say a few feet square) from bags by hand. If there is anything you don't want to cut corners on, it's the foundation. My dad has been an architect for almost 30 years, he runs his own business, I asked him about it. It's not that it's difficult to do well, it's impossible to do well. For the foundation, get professionals with a concrete truck to do it, it'd be expensive, but I think we could get enough donations to at least cover part of it. In fact, it would probably be cheaper to get a truck rather than buy concrete by the bag.
However, laying concrete blocks is pretty easy. (easy to do, hard to make it pretty lol) And like I said, if we aren't talking about a foundation, none of what I said is relevant.

I totally agree with motormouth. I too am a handyman for many years. You'll need a good foundation if you are planning to build a several room building or two stories at that.

It should work as long as there is rebar and lateral support to keep the walls from splitting.

Are you digging any type of foundation or are you just laying the first course straight to the ground? It's hard to tell by the photos.
